Cookies are one of the best dessert or snack that you can eat. Aside from it being delectable, it’s also easy to make that even if you don’t know how, you will be surprised that baking cookies can only take a few minutes. One of the most delicious white chocolate cookie flavor is the raspberry cookie. No matter what kind of occasion it is whether it is Christmas, New Year, Thanksgiving or even your birthday, this flavorful cookie makes your celebration perfect.
Raspberry is also known as hind berry. It is an eatable kind of fruit that can be processed into different kinds of grocery products. One of those grocery products is a raspberry cookie.
Listed below are the ingredients and detailed steps on how to make delicious raspberry white chocolate cookies.
Ingredients:
Filling:2 ounces or 60 grams of grated white chocolate
1/4 to 1/2 cup, of raspberry preserves or raspberry jams
Bread:* 2 cups or 260 grams of all-purpose flour
* 1 tsp of pure vanilla
^ 1/2 cup or 60 grams of powdered sugar
* 1 tsp salt
* 1 cup or 226 grams unsalted butter
There are also optional raspberry preserves that are homemade. You can also include this if you like a more raspberry-ish flavor.
* Lemon juice (fresh) jus a few drops
* 2 cups or 225 grams of unsweetened frozen raspberries
Instructions:
For breads, hasten the flour with salt in two different bowls.
In your electric mixer or hand mixer, the butter must be beaten for at least one minute until it is already smooth. Also mix the vanilla and add the sugar and stir or mix for two minutes until it is completely smooth. The dough must be flattened into a disk shape.
Get a plastic wrapper and wrap it carefully. You must refrigerate the dough for at least an hour.
While refrigerating the dough, you can now preheat the oven to 350 degree Fahrenheit or 177 degree Celsius with the rack in the center of it. Then, line the baking sheets and the parchment paper.
Roll out the dough in a floured surface until it’s about 1 centimeter thick or 1/4 inch thick. You must use a 5 to 7.5-centimeter or 2 to 3 inches round shape cookie cutter or any shape that you like to cut the dough.
For example, you can use a heart shape or maybe a square depending on your preference and sometimes depending on the occasion. Run your own creativity in making perfect raspberry white chocolate cookies.
Place the cookies apart on a prepared baking sheet for about 2.5 centimeters or an inch. You need a smaller cookie cutter to cut out the middle or centers of half of the white chocolate cookies on the baking sheets. This procedure is about sandwiching or joining two cookies together and there must be a small cut out underneath the cookie so that you can see the raspberry jam underneath of it.
For about 15 minutes, you must place the unbaked cookies in the refrigerator. This will stabilize the dough so that the original shape of the cookies will be maintained. Bake the cookie for about 10 minutes or until it turns light brown. After this, let the cookies cool down on a clean wire rack. Dust the cookie with confections such as icing or powdered sugar for added flavor.
At the bottom of the cookie, spread about 1/2 tsp of jam with a little sprinkle of chocolate (grated). After that, place the other cut out cookie to gently sandwich them together. You can make at least 12 raspberry cookies with this recipe.
